Cucumber and goat’s cheese salad with anchovies

Serves 1:
Diced goat’s cheese 40g
Marinated anchovies 2
Cucumber 1/2
Red onion sliced 1/2
Dill 1 tsp
(finely chopped)
Flat leaf parsley chopped 1 tsp
Lemon juice 1 tsp
Olive oil 1 tbsp
Salt, pepper

• Peel and deseed the cucumber, then dice into 1 cm. cubes.
Mix together the diced cucumber, diced goat’s cheese, sliced
onion, dill and marinated anchovies.
• Mix the oil, lemon juice and parsley. Season with salt and pepper.
• Pour this sauce over the salad and toss.
