Goat Tomme   50 g
Leeks             30 g
Smoked salmon  50 g
Parsley           1/2 teaspoon
Olive oil          2 tablespoons
Sherry vinegar 1 tablespoon
Pepper           1 pinch

- Chop the leeks into strips and cook in salted water for 3 min.
- Dice the goat tomme and cut the smoked salmon into slices.
- Chop the parsley.
- Make the vinaigrette and mix everything together.
- Arrange on a plate.

Chef's tip: you can add a few thinly-sliced raw onion rings and some lemon wedges. You can replace the leek with some diced blanched courgettes or some avocado.
