Ingredients (serves 6):
1 sheet of pizza dough
2 tbsp olive oil
1 clove garlic
1 bouquet garni
300 g Gorgonzola cubes
½ red pepper
½ green pepper
½ yellow pepper
20 g black olives
Pre-heat the oven to gas mark 8 (250°).
Prepare a tomato fondue: peel and de-seed the tomatoes. Dice them and let them soften in olive oil along with the chopped onions. Add the crushed garlic and condiments. Season and put aside.
Slice the peppers into fine strips.
Roll out the dough into two discs about half a centimetre thick.
Lightly oil the two discs of dough.
Cover them with a thin layer of tomato fondue.
Dot with the pepper strips, olives, Gorgonzola cubes and prawns.
Cook for 15-20 minutes in a hot oven.
Try serving the pizza with a rocket salad accompanied by cubes of Gorgonzola.
