Omelette with blue cheese and fresh herbs

Serves 2

Ingredients:
80g creamy blue  (8 slices)
4 eggs
Oil 
5g Flat leaved parsley, chopped
Chilly pepper
Freshly ground black pepper

Break the eggs into a bowl and add the parsley, a pinch of chilli pepper and the blue cheese cut into pieces.
Heat the oil in a frying pan until almost smoking. Pour in the egg mixture and cook quickly.
