Salmon and goat cheese carpaccio

Fresh salmon                                    7 oz (200g )
Slices of Soignon’s fresh goat cheese   8
Sea Salt
Fresh pepper

Marinade :
Olive oil                                            4 tablespoon
Lemon juice                                      ½ a lemon
Chopped shallot                                1
Chopped dill                                     1 tablespoon


• Cut the salmon into thin slices.
• Lay out the slices evenly on the plates..
• Prepare the marinade.
• Using a brush, brush the salmon marinade.
• Place 1 or 2 slices of goat.
• Drizzle marinade over.
• Salt lightly with sea salt and pepper give two towers mill.
• Serve your cappacios with toasts
