Tabouleh with goat’s cheese and raisins

Serves 1:
Tomato and Basil goat’s cheese cube 25g
Semolina 30g
Raisins 15g
Tomato 1/2
Cucumber 1/2
Sliced spring onion 1/2
Lemon juice 1 tbsp
Olive oil 1 tbsp
Flat leaf parsley
Chopped 1 tbsp
Finely chopped mint 1/2 tbsp

• Deseed and dice the tomato. Do the same with the cucumber.
• Place the lemon juice in a bowl and add salt and pepper.
Pour in the oil in a thin stream while whisking briskly.
• In a salad bowl, mix the semolina, diced goat’s cheese, diced
vegetables, herbs and raisins.
• Pour the sauce over the tabouleh and toss gently.
Serve well chilled.
